Kettle Dogs

Best when cooked in a kettle on a tripod above a suspendedCampfire ...

8-10 Hot Dogs

1-12oz can chili beans

1 chili spices pkg

1 16 + oz jar Mild or Hot Chunky Salsa (as clumsy as you see best)

Water

Include all data (including the juice from the chili beans), with the exception of the water. Add water until the desired thickness you want. Let it cook slowly until you can not stand how good it smells any more. I usually will allow to cook over a low fire for 1 1 / 2 to 2 hours.

Kettle Ham &Potatoes

Best when on an open fire or boiled in a kettle hung on a tripod

1lb Picnic Ham (chunked) - (Turkey ham is ok, but not so good)

6 potatoes (4 chunked - 2 mashed)

1 onion (chunked)

2 stalks celery (chunked)

Milk

Water

Salt

Pepper

Garlic powder

There are 4 ways to start with ......

1) Substitute canned whole potatoes for fresh

2) Pre-boil the potatoes at home beforecamping

3) Use a normal camp stove to cook the potatoes

Is 4) Have a hot enough fire going to cook the potatoes in the pot (which I normally do not, but I'm really into outdoor cooking, which ....)

If you find out what you do, put mashed potatoes, ham, and enough milk to make it pasty. Add 1 cup of milk. The rest of the potatoes, onions and celery. Slowly cook until all vegetables are soft. Salt and pepper to taste during this time. You may need to add water while it slowly cooks the texture you desire (milk work) This should serve between 4-6 adults to hold. If you serve more than this to for each figure only 2 other persons who need only 3 more potatoes (2 diced, pureed 1). The other vegetables to your taste.

* Chunked means that the vegetables are chopped and not on the same pieces. The whole idea is to make this meal look and taste homemade.
