Old Fashion Salad Recipes - Classic Potato Salad, Copper Coin Salad and Deviled Eggs

Go back in time and pull those old-fashion recipes the next time you need a salad for a picnic, potluck, church supper, etc. They are also ideal for the family table. Here we have a classic potato salad recipe from copper coin, which is a carrot salad, and Deviled Eggs.

Hellman CLASSIC POTATO SALAD

1 cup Hellman's Real Mayonnaise
2 tablespoons vinegar
1 1 / 2 teaspoon salt
1 teaspoon sugar
1 / 4 cup pepper
4 cups cooked, diced, peeledPotatoes (about 5 or 6)
1 cup celery, sliced
1 / 2 cup chopped onion
2 hard-boiled eggs, chopped

Season to taste Combine the mayonnaise, vinegar, salt, sugar and pepper. Gently stir in the potatoes, celery, onon, and eggs. Cover and chill until serving time.

Copper coin SALAD
This is a recipe from my husband's aunt, Norma.

2 kg carrots, sliced
1 large onion, chopped
1 cup green bell pepper, chopped
1 can tomato soup
1 tablespoon Worcestershire sauce
1 teaspoon preparedMustard
1 cup sugar
1 / 2 cup salad oil
1 / 4 cup vinegar

Cook carrots in salted water until soft. Cool. Mix carrots, onions, green peppers together.

To the dressing, whip the tomato soup, Worcestershire sauce, mustard, sugar, oil, vinegar and mix together. Pour over the vegetables. Stored in the refrigerator overnight. Do not stir.

VIRGINIA'S EGGS Deviled
This recipe is from an old Monroe County, Indiana Church cookbook.

6 hard boiled eggs
1 / 4 cupMayonnaise
1 teaspoon vinegar
1 teaspoon mustard
1 / 8 teaspoon salt
Pinch of pepper
Paprika for garnish

Cut eggs in half lengthwise to give you remove the yolk, a small bowl and mash with a fork. Mix the mayonnaise, vinegar, mustard, salt and pepper to the mashed eggs. Mix until well combined. Refill the egg whites with the mixture. Paprika for garnish, sprinkle the top.
