Concert in the Park - Easy Dinner Recipes and Dinner Ideas For Family Fun

Concerts in the Park are a good source of cheap family entertainment in the summer. The selection ranges from the local high school band concerts to full scale professional artists on local outdoor venues. In our area a local winery hosts great outdoor concerts that are enjoyable for all ages. Check your community newspaper and event pages for local events, times and dates. Plan some easy dinner recipes and pack a delicious family feast. It is a great way to get back withNeighbors and friends that you do not see that often and the music and entertainment are great too. They are great concerts to take the children because they can play on the lawn when they bore me. Try to close the station play area, so that you keep an eye on the children and an ear to the concert at the same time.

In this picnic I planned, a pan bagnat, French a tuna sandwich which is delicious and perfect for picnics and outings. This easy dinner recipe comes togetherkeep in minutes but for hours in a cooler and will only get better as the flavors blend. Bring crostini and olive tapenade or humus for the dissemination as a great simple appetizer. Cold crunchy cucumbers or green olives or Kalamata would be delicious.

Pain Bagnat

This is a French-style tuna sandwich. I love it for a quick summer dinner. It's also great to make ahead - it will onlybetter. It's nice to take a picnic, because there is no mayonnaise.

Serves 4

Ingredients

1 lb French bread loaf about 14 inches long
2 tuna - 6 oz can - preferably in Oil
1 / 4 C olive oil
1 / 2 C Basil - Fresh
2 pcs tomatoes, chopped
1 / 2 C kalamata olives, chopped
1 / 4 c capers, rinsed

Instructions

Slice the bread in the middle horizontally. Brush the bread with olive oil and layer with basil. Open the tuna, but not runoff.(If using tuna in water instead of oil, drain and add) 2 TB olive oil. Combine the remaining ingredients and layer in the sandwich. Wrap well in foil and press hard with a frying pan. This is the juicy goodness in the bread. Some have suggested that sitting on the sandwich, but we are not to go there. Well, if you want this sandwich, it is ready to go somewhere to take remember to pack a knife cut. Otherwise, you can unwrap and cut into slices, serve immediately. The sandwich is made greatin the morning for a quick grab on your way out of the Pirin. Enjoy!

Easy Three Bean Salad

Great accompaniment to any meal. Keep in refrigerator up to one week in a solid container with a lid.

1 can kidney beans - 15 oz, rinsed and drained
1 Black Beans - 15 oz, drained and rinsed Can
1 can chickpeas - 15 oz, drained and rinsed
1 / 2 c Parsley - fresh, chopped
1 / 4 C olive oil
1 / 4 C balsamic vinegarVinegar
